A Very Dairy Pesach: The Menu

It’s amazing how much better I feel about Pesach, now that my menu is printed and on the fridge.
Of course, the little sticky heart helps, too.
As a vegetarian, I often get questions about what I eat — during the week, on Shabbos, and especially on Pesach.
I’ll you the truth. The secret to making a vegetarian Pesach is all in the cheese. Mozzarella cheese, cottage cheese, sour cream…they’re all on my shopping list, and in abundance.
I know the vast majority of you are making fleishig Pesachs. But if you need meal ideas for Chol Hamoed (or if you like having one dairy meal among the many meat ones), I’m your girl. And this is your plan.
You may notice that there isn’t much overlap between my Pesach recipe round-up and this menu plan. That’s because I insist on trying out lots of new dishes. What can I say? I’m impossible. : )

- Dinner: zucchini frittata & salad
Tuesday, April 10 (Chol Hamoed)
- Lunch: scrambled eggs & salad
- Dinner: matzah lasagna
Wednesday, April 11 (Chol Hamoed)
- Lunch: matzah with creamy roasted garlic dip
- Dinner: butternut squash fennel soup & herbed Pesach rolls
Thursday night, April 12 (Yom Tov)
- marinated eggplant salad
- dill carrot matzah ball soup
- sweet potato and mushroom “lasagna”
- apple kugel
- Ben & Jerry’s with chocolate caramel matzah squares
Friday lunch, April 13 (Yom Tov)
- creamy roasted garlic dip

Wow. Pesach is a very different experience when you are a vegetarian gebrokts eater than when you’re a meat-eater who can’t eat gebrokts! I’m excited to see my recipe made it on there.
(despite our wildly different pesach restrictions!)

Wow, you’re right — that’s about as different as you can get. At least we have smashed potatoes in common.
Oh, wait. You don’t eat garlic. Um, at least we have matzah in common?

Great ideas for Pesach meals. I plan on eating as many dairy meals as possible. What is the moussaka recipe? Actually, I want to see all the recipes. Such a tease!
