Menu Plan: Week of Feb. 17, 2013

One week to go! Are you in costume yet? Or, more like it, have your kids changed their costume requests at least five times yet?
At just nine weeks old, my son wears whatever I want him to wear — and while this is true every day, it works to my best advantage on Purim. At some point down the line I’m sure he’ll voice his own little opinion, but until then, it’s all my call. This has got to be one of the top reasons people have kids.
As we barrel towards Purim, I’ll share my simple penne a la vodka (makes a great main dish for a dairy seudah!) and a peek at our themed mishloach manot.
Sunday
- Red lentil feta burgers and veggies in buns
- Sweet potato oven fries
Monday
- Curried eggplant and chickpeas
- Quinoa
- Lettuce salad with mayo herb vinaigrette
Tuesday
- Bissli-topped tuna casserole
- Lettuce salad with mayo herb vinaigrette
Wednesday
- Zucchini-tomato saute
- Couscous
- Roasted potato wedges
Thursday (after the fast)
