Italian latkes

I really wasn’t sure if this was going to work, putting sauce and cheese in a classic potato latke. But oh boy, it sure does. As soon as you take that first bite/get your first whiff, there’s an instant “pizza feeling” going on. It’s the sauce, it’s the cheese, it’s the basil and oregano. They’re all there in all the right places.

Ironically, what makes a pancake authentically Italian is the inclusion of ricotta cheese, which takes a latke in a totally different direction. (They’re delicious, too, though. Highly recommended.)

But for pizza-inspired latkes, I think we can stretch the definition a bit. Serve these alongside garlic bread and a salad, and you have yourself a full Italian dinner.

When this came up, I actually said “woah.” These are going on the menu – sauce and cheese makes everything better!
