Menu Plan: Week of Jan. 12, 2014

We don’t always eat dinner. Make that: we sometimes have junk food instead of dinner. I guess it’s the fate of a recipe developer and her husband, or maybe just the fate of a tired person who doesn’t feel like making a real meal at the end of a busy work day. Or both.

A couple of weeks ago, I spent all afternoon working on a recipe for chocolate cookie truffles. By the end of the day, we had tons of truffles lying around, and I didn’t have any extra energy, so…truffles for dinner. I already know that tomorrow will be like that. I’ve got to test a few batches of sugar cookies for a deadline this week, so when we need to eat, that’s what will be available. (Need sugar cookies? Feel free to drop by.)

I happened to have cooked black lentils and caramelized onions in my fridge, so adding the rest of the ingredients was a breeze – delicious!! Thanks for inspiring me to make something a little out of my wheelhouse.
