Jumbo pizza hamentaschen

By | March 4, 2014

I’ve always felt it was a shame that hamentaschen have so little in the way of filling. You know how it goes — put more than a teaspoon or so in the center of a standard-sized hamentaschen, and it opens during baking. So to get a serious amount of filling, I had to go big. Really big.

These jumbo hamentaschen are 7-inch pizzas in disguise. You roll out the dough and top it with sauce, cheese, and veg (or whatever) like you would for a regular pizza. Except then you fold in the corners, pinch them tightly, and tuck them in place. There’s plenty of crust and plenty of filling, and all of it’s delicious.

Before you make pizza for dinner this Adar, wait! With no extra effort, those could become your coolest hamentaschen yet.
