Sun-dried tomato, spinach & mozzarella blintz souffle

I’m parting with my Sunday menu plan tradition to share something absurdly delicious with you. The last two times I made blintz souffles (last Rosh HaShanah and last year just before Shavuos), they were the classic sweet kind. Those are good, too. But this savory blintz souffle is really something. I’m going to go so far as to say that this is one of my favorite dishes on the blog. We’re talking out of 400+ recipes, guys.

And good news: Blinztes really aren’t difficult. You can have these wrappers done in no time — I mean, it takes like 1 minute for each one to cook — and then it’s just a matter of filling, folding, lining them up, and pouring the custard over the top.

If you’re looking for a special main dish this Shavuos, I really, really think you should put sun-dried tomatoes, spinach, and mozzarella on your shopping list.

My makolet! It’s from one of the companies where you just have to soak the leaves for 3 minutes, etc.
